Can I use gcc or some other open source compiler to compile Apache http or do I have to use microsoft's Compiler?

GCC is for linux...
If i'm not mistaken you can use VS 6, VS.net (2003) and 2005, Borland C++
If you want to run under Cygwin (not recommend IMHO) you can use Cygwin's GCC
